9 Air Fryer Mistakes That Are Sabotaging Your Easy Meal, According to an Expert
Air fryers have revolutionized home cooking, offering a quick and convenient way to prepare crispy, delicious meals with minimal oil. However, even experienced home cooks can fall victim to common air fryer mistakes that compromise the quality of their dishes. We spoke with Cathy Yoder, the “air fryer queen” and founder of Empowered Cooks, to uncover the most frequent errors and how to avoid them.
1. Underestimating Your Air Fryer’s Versatility
Many people limit themselves to making frozen french fries and chicken nuggets in their air fryer. “People get fixated on maybe two things like chicken nuggets and french fries,” says Yoder. “Just thinking beyond frying, if you can grill it or bake it, in most cases, you can use your air fryer for it.”
Your air fryer is capable of so much more than just reheating frozen foods. Experiment with roasting vegetables, cooking proteins, baking desserts, and even making hard-boiled eggs. The possibilities are endless when you start thinking outside the box.
2. Wasting Time Preheating
While many air fryer recipes call for preheating, Yoder suggests this step may not be necessary. “It maybe made a difference of two minutes,” she explains. “I preheat if something has a very short cooking time.”
Preheating can add unnecessary minutes to your cooking process, defeating one of the main benefits of using an air fryer. Unless you’re cooking something with a very short cook time, skip the preheat and save yourself some precious minutes.
3. Using Nonstick Cooking Spray
It might seem like a good idea to use nonstick cooking spray in your air fryer, but Yoder warns against this practice. “It is said that some of those propellants in cooking sprays could damage the coating in the air fryer,” she says. “And what’s more: Go look at the ingredients in there. You don’t want to ingest that.”
Instead, invest in a spray pump that you can fill with your own oil. This way, you control the ingredients and avoid potentially harmful chemicals.
4. Using Too Much Oil
One of the main selling points of air fryers is their ability to produce crispy, fried-like results with minimal oil. However, some people still use too much oil, negating this benefit.
“In most cases, it’s not needed,” says Yoder. Most meats release enough of their own fat during the cooking process, and frozen foods are already loaded with oils. Use oil sparingly, if at all, and only when necessary for specific preparations like breading or helping spices adhere to food.
5. Using Not Enough Oil or the Wrong Kind
While using too much oil is a common mistake, using too little or the wrong type of oil can also lead to disappointing results. Certain vegetables that don’t contain fat may need a little help from oil to achieve the desired texture.
When oil is necessary, Yoder recommends avocado oil due to its high smoke point and health benefits. “Olive oil has a lower smoke point,” she explains, “which can result in burnt flavors if you’re air frying for a longer time at the top of its temperature range.”
6. Overcrowding the Basket
Air fryers rely on air circulation to cook food evenly and create that coveted crispy texture. Overcrowding the basket prevents proper air flow, resulting in unevenly cooked, soggy food.
“It’s essentially just a mini convection oven,” Yoder says. “For crispy things you want air to be able to get around all of them.” Stick to a single layer of food in most cases, and leave adequate space between pieces for optimal results.
7. Not Shaking or Rotating the Food
The “set it and forget it” approach doesn’t work well with air fryers. For the best results, you need to participate in the cooking process.
“Shaking or rotating helps with even cooking,” says Yoder. This is especially important if you’re cooking more than a single layer of food. Take a moment in the middle of the cooking cycle to shake the basket or flip your food for that perfect, all-over crispiness.
8. Starting with Wet Food
Air fryers work best on dry food. If you’re rinsing vegetables or proteins before air frying, make sure to dry them thoroughly first.
“If it’s wet, you’re going to be steaming the exterior where we want to char,” explains Yoder. This can lead to soggy, unappetizing results. Always pat your food dry before placing it in the air fryer for the best texture and flavor.
9. Not Cleaning It Properly
While air fryers are generally easy to clean, many people neglect to clean the heating element inside the unit. “Not wiping down the heating unit inside the air fryer is a common mistake,” says Yoder.
Food particles and grease can accumulate on the heating element, affecting the taste of your food and potentially creating a fire hazard. After each use, allow your air fryer to cool, then wipe down the interior, including the heating element, with a damp cloth or paper towel.
By avoiding these common mistakes, you can ensure that your air fryer meals are consistently delicious, crispy, and perfectly cooked every time. Remember, the key to air fryer success is understanding how this appliance works and adapting your cooking techniques accordingly.
